27/02/2015 Meals of the Day


Good Morning & Happy Friday...^.^
Long time I did not steam cake for my 19mo lo as she was not so interested to have it...anyway I am trying again today and hope she will accept it.
I believe many people might not able to sleep early last night due to the fire crackers noise. I am lucky that I sleep through from 10.30pm till 4am..I totally did not hear any sounds. ... ;p

Breakfast : Steam sweet potato cream cheese cake, raisin, 2 slices of King mandarin and honey drinks.

Lunch & Dinner: braised rice with mix vegetables and chicken

Teatime : red bean dessert and blueberry yogurt cookies


Steam sweet potato cream cheese cake 
Ingredients :
35g cream cheese 
1 tbsp muscovado sugar or any sugar or honey
2 tbsp sweet potato puree or replace by any fruit puree
3 tbsp milk or yogurt
1 egg
75g all purpose flour or cake flour
1 tsp Aluminum free baking powder

Steps:
1) beat cream cheese and sugar till flufy, add in egg and beat till combined
2) add in sweet potato and milk, mix well
3) sieve in flour and baking powder
4) fold gently till combined
5) add in sweet corn or raisin (optional)
6) steam at high heat for 12mins






Braised rice with mix vegetables and chicken 

Ingredients :
1.5 tbsp mix grains or white rice (soak overnight)
3 asparagus 
1 brown button mushroom
1 shallot
1 chunk of chicken breast
2 tbsp sweet corn
3 tbsp cubed pumpkin

Steps:
1) steam rice for 20mins
2) cut all other ingredients into small tiny bite size
3) sautéed shallot with graoe seed oil or any vege oil till fragrance
4) add in chicken and stir fry for 1 min
5) add in all other ingredients and stir fry for 1 min
6) pour in 1/2 cup water and close lid, shimmer for 5 mins
7) add in dash of pepper and 1/2 tsp liquid Amino.
8) off fire, pour the cooked mix vegetables onto the steam rice
9) steam for 5 mins prior serving if not consume immediately




Red Bean Dessert

70g pre-cooked red bean 
1/2 cup water
2 tbsp full cream milk / fresh milk
1 tsp muscovado sugar

Steps:
1) pour all ingredients in a small pot
2) cook under small fire till boiling 
3) boil for 5 mins and ready to serve warm

Blueberry yogurt cookies


Ingredients:

Fresh blueberries 35g
Plain yogurt 15g
Muscovado sugar 20g
Melted unsalted butter 30g
Aluminum free baking powder 1/4 tsp
Low protein flour 100g ( i use all purpose flour today) 

Steps:
1) preheat oven at 170°c
2) Blend blueberries, yogurt, sugar & melted butter till smooth ( i do with this way today and its okay)
3) add in flour and baking powder and FOLD gently till combined, remember very gentle and not to over mix and knead it.
4) roll it flat to 3-4mm thick
5) cut out with small cookie cutter
5) bake for 20-25 mins or lightly golden brown

31/3/2015 Tuesday meals for my 20mo lo

Trying some new recipes today, Dutch Baby "Puffed Pancake" (original recipe from All Recipes) and black sesame pudding (original recipe by a Taiwanese mummy).

Breakfast : Dutch Baby , pomegranate, farm fresh cow milk

DUTCH BABY "Puffed pancake"
Ingredients

[ best ratio
egg :  flour  :   milk
   1 :   30g   :  60ml ]

10g unsalted butter
2 eggs
60g all purpose flour
120ml fresh milk
1 tsp sugar
pinch of salt
1/2 tsp organic vanilla bean paste

for topping decoration
some icing sugar
any fruits ( blueberry/strawberry/mango/papaya/apple/etc)

Steps

  1. Place a 20cm cast iron skillet (I am using a 24cm non stick pan and remove the handle) inside oven and preheat oven to 210 degrees C).
  2. In a medium bowl, beat eggs with a whisk until light. Add milk and stir. Gradually whisk in flour, vanilla extract and salt.
  3. Remove skillet from oven. Melt butter in hot skillet so that inside of skillet is completely coated with butter. Pour all the batter in the skillet and return skillet to oven.
  4. Bake until puffed and lightly browned, about 15-20 minutes. Remove and place on a wire rack to cool down and sprinkle with powdered sugar




Lunch & Dinner : Vegetables in Soup stock, Stir fry Broccoli with pork & Mix grains Rice



Teatime : Black sesame snow pudding & Barley drinks

Black Sesame Pudding
Ingredients (4 kids servings size) 
350 ml Fresh milk
45g Corn Starch
10g muscovado sugar
10g pure black sesame powder

Steps:
1) add 200ml milk into corn starch, mix well
2) add 150ml milk into sugar, cook under low heat till sugar is melted
3) pour in the corn starch mixture and keep stirring
4) add in black sesame powder and keep stirring and cook till thick consistency
5) scoop into pudding glass and let it cool before storing in the fridge

Simple but healthy furthermore yummy breakfast for lo... my 19mo lo finished it in minutes.

Black sesame soup offers useful quantities of Iron,magnesium, manganese, copper, calcium,vitamin B1, vitamin E, phytic acid,phytosterols and sesamin. (Source from Wikipedia)

Black Sesame dessert
Ingredients
1/2 cup cooked rice
1 cup water
2 tbsp black sesame powder
1 ~ 1.5 tsp Natural rock sugar

1) blend water and cooked rice with blender
2) pour into a sauce pan, add in sesame powder, keep stirring while cooking under small fire. If too thick the mixture, add little bit water.
3) add in rock sugar and cook till melted.
4) blend the mixture again to have more smoothie texture.
5) ready to serve warm.




Simple finger food as Teatime snack for my 19mo lo

Sweet Potato rice cake (伪饭团)
Ingredients:
1/2 cup cooked rice 
1/2 cup cooked sweet potato 
1 tsp potato starch 
Some black sesame seeds (optional)

Mix all ingredients well, divide into 4 or portions, use damp fingers to form desired shape, then pan fry till both sides golden brown.

9/2/2015 Monday Bite-size Cheddar Cheese Bread

Good Morning dear mummies. ....
I woke up 4am, folded clothes and about to start cooking, my 18mo woke up at 4.30am ended up I had to nurse her to sleep again and stop all my cooking..
Finally myself also fall to sleep until 5.45am.. @@ haiz.... gonna be a rushing morning again. No choice, my lo gonna eat frozen bread this morning.
By the way, I believe many mummies know kuih bangkit (番婆饼) and is one of the CNY cookies. Today, I added coconut milk into the Tamago Balls recipe and it's taste just like the kuih bangkit. Haha*** Baby version kuih bangkit..
Breakfast: Bite size Cheese bread
Lunch & Dinner : Steam mix grains rice with pork tofu egg drops soup
Teatime: Baby kuih bangkit




Bite-size Cheddar Cheese Bread
Ingredients:
High Protein Flour 200g
Instant yeast 1/3tsp
Castor sugar 30g (I used muscovado sugar)
Egg 1pc
Salt 1/8 tsp
Cheddar Cheese powder 2 Tbsp ( I used 15g Bega cheddar cheese)
Milk 80g
Unsalted butter 30g (cut into cube and cool down to room temperature)
Method:
1) Mix all the dry ingredients except butter till well-blended.
2) Add in the liquids (egg and milk) and knead to form a rough dough.
3) Add in butter cubes and knead to form elastic dough.
4) Let it proof for 60 minutes or till double its size.
5) Punch down the dough to release air and let it rest for another 15 minutes.
6) Flatten the dough and roll it into 1cm thick rectangular shape.
7) Using a sharp knife, cut the dough into 2cm x 2cm square pieces.
8) Arrange them into baking tray and let them proof for another 30 minutes.
9) Bake in preheated oven at 180′C for 12-14 minutes

P/S : I used bread maker function "dough" to beat 20mins for 1st time, then stop it, then restart again function "dough" for 1.5 hours, then follow the step 5 - 8, then apply egg wash (egg:milk 1:1) before baking.


Pork tofu egg drops Soup


Recipe. 
1/2 pc of organic tofu
1 chunk of pork (slice thin pcs)
1 inch of carrot (cut into smaller size)
2 cups of chicken soup stock
1/2 egg
1 cup water

Cook all ingredients in low fire for 20mins till the carrot turn tender then add in tofu and cook for another 2mins


Baby kuih bangkit
Ingredients


1 egg yolk
10g milk powder
10g coconut milk
120g potato starch 
20g muscovado sugar (sieved )

Steps:
1) mix the egg yolk and sugar, using hand whisk to beat till pale white.
2) add in milk powder and coconut milk then mix well.
3) add in the potato starch by 3 times separately.(maybe not use all the potato starch), mix by spatula or spoon till dough is form...it suppose not sticky soft dough.
4) Pre-heat oven at 150'C.
5) divide the dough into 3 portions. Roll the dough become a stick, cut by knife at 1cm size each and roll into a small ball.
6) place the balls onto a non stick baking sheet.
7) bake for 12-15mins. when half way baking, take out the tray and turn over the other side and continue baking.

Tamago Balls (Kuih Bangkit Version) 

(i can make about 150pc mini balls)
Ingredients

10g milk powder
10g coconut milk

Good morning! Every morning cooking for my 18mo lo is one of the kind of showing my love to my lo and I am appreciated that my mom has given me this skill when I was still young.

Every night before going to bed, I will say "good night and I Love You" to my sweetie lo and her reply is "I... You" & "night night"... That is really sweet and melt my heart.




Breakfast: red bean pancake
Ingredients

1/3 cup precooked red bean
1/3 milk
1/2 cup all purpose flour
1 egg
1 tbsp muscovado sugar
1 tsp grape seed oil
1/2 tsp aluminum free baking powder

Just mix well all the ingredients and scoop by small teaspoon of each batter on a non stick pan. pan fry with small small fire, close lid, turn over when pancake surface start forming holes (as per photo left top). pan fry another 
side till golden brown.

Lunch: Mee Sua with onion corn soup
Steps:
1) cook misua till tender, rinse dry, soak in cold icy water for 30 secs, rinse dry again, add 1 tsp grapeseed/olive oil and mix well)

Soup base: 1 chunk of chicken breast, 3 slices of corn, 1 onion, 1/3 cup of garden pea. 3-4 bowls water, boil for 30-40mins

Teatime: chicken meat sticks
Ingredient :
60g Chicken breast
1/4 pc Tofu
20g Mashed Potato 
1 tbsp soaked Rolled oat 
2 tbsp shredded carrot
Salt and pepper
1-2 tbsp all purpose flour
1 tbsp potato starch

Blend all ingredients except carrot till smooth, then add in shredded carrot, mix well, put in a plastic bag, cut a hole at the edge, squeeze out sticks (width 1cm length 5cm) on a non stick baking sheet, bake at preheated oven of 180'C for 20mins.

Baked some teeth less snacks for my 18mo lo this morning because of some mummies' asking for teeth-less lo can eat it..

Breakfast : Bite size flowers sweet potato (teeth-less lo can eat) & blueberry yogurt
Lunch and dinner : Creamy sweet corn meat floss Rice
Teatime: Banana Biscuits (Crunchy and hard type, suitable for lo above 1yo and knows how to chew and at teething stage too) & Fuji pear juice



Bite Size Flowers sweet potato
Sugarless & flourless

Ingredients:
Sweet Potato 85g
Unsalted Butter 15g (melted)
1 egg yolk

1) i cook 1 whole sweet potato (with skin) in boiling water for 15mins, after cooked, peel off skin and weight 85g then mashed it with a fork.
2) slowly add in the melted butter and mix well.
3) mix in the egg yolk till well combined
4) put in a piping bag with flower shape nozzle, squeeze the batter on a non stick baking sheet
5) bake at preheated oven of 180'C for 15mins-20mins or till light golden brown at the edges


Creamy sweet meat floss thick soup Rice
(for 2 servings)

Ingredients
2 packs of sweet corn (4 tbsp each)
½ potato (cook in boiling water with skin for 15mis, then peel off skin and mash with fork)
½ onion OR 1 shallot
2 floret broccoli
2 tbsp homemade meat floss (or can replace by 1/4 chicken breast, cut into small size, boil for 10mins, blend with some water)
1 inch of carrot (diced tiny size)
Olive oil
10g cheddar Cheese
2 tbsp fullcream milk OR fresh milk

Steps:
1) Boil potato with skin for 10-15mins
2) Blend 1 pack of the corn & potato with some water
3) Cut Onion, broccoli & carrot into tiny size (set a side)
4) Boil chicken for 10 mins, then blend with some water till smooth (SKIP if use homemade meat floss)
5) Heat pan with some olive oil, saute the onion, corn, broccoli & carrot for 1-2 mins, then add in the corn mixture and 2 cups of water
6) Cook with small fire shimmer for 10 mins.
7) Add in cheese and milk, cook until cheese melted and till prefer consistency then can off fire.
8) pour on top of cooked rice and ready to serve warm
9) If cant finish, can keep the creamy sauce in the freezer for next consume, thaw first then steam for 10 mins and ready to serve warm with rice or macaroni.

Banana Biscuits

50g mashed banana
10g muscovado sugar (or any type of sugar)
20g grape seed oil (or any type of vegetable oil)
80g cake flour
some white sesame

Steps:
1) Mash banana, mix in sugar and oil,
2) fold in flour by separately 2 times,
3) divide dough into 16 balls and place on baking tray with nonstick baking paper,
4) use a flat bottom item to press the small balls till flat, sprinkle some sesame on the center, lightly press the sesame.
5) Bake at preheated oven at 160’C for 30mins

What a wonderful day with the sweetest smile from my 18mo lo before going to work.
Breakfast : Steam edamame, orange and orange juice
Lunch and dinner : Baked rice balls with cheese and prawn
Teatime : mini flower Tamago and red bean dessert


Steam Edamame
Just steam for 5 mins and ready to serve warm

100% Pure Orange Juice



Bake Rice Balls with prawn and cheese

Ingredients:
4 tbsp mix grain rice (cook with 4 tbsp water, by steaming)
1 egg yolk
1/2 tbsp plain flour
1/2 onion (chopped finely)
1/3 cup small prawns
some Bega cheddar block cheese ( cut into 1cm x 1cm thin slice)
dash of pepper

Steps:
1) cook rice first
2) chop the onion and cut the prawn into smaller size
3) sauteed the onion with some vegetable oil till fragrance then add in the prawn to stir fry for 1-2 mins by adding dash of pepper, off fire and set aside.
4) mix egg yolk and flour, then add in the prawn, mix well
5) pour the rice into the mixture and mix well too.
6) use a measuring teaspoon to scoop out 1 tsp the rice mixture to form a ball. align the rice balls on a non sticky baking sheet. (can make 24 pcs rice balls) the rice balls might be sticky but you can wet your palm a bit, then will be handled easily)
7) place a slice of cheese (1cm X 1cm size) on each rice balls.
8) bake at preheated oven of 160'C for 10mins (at middle rack)
9) remove tray and put it on the upper rack then set to 180'C, bake for another 5mins till the cheese turn light golden brown



Mini Flower Tamago
Ingredients:
1 egg yolk
10g milk powder
10g coconut milk
120g potato starch
20g icing sugar (can replaced by fine molasses/muscovado sugar )

Steps:
1) mix the egg yolk and sugar, using hand whisk to beat till pale white.
2) add in milk powder and coconut milk then mix well.
3) add in the potato starch by 3 times separately.(maybe not use all the potato starch), mix by spatula or spoon till dough is form...it suppose not sticky soft dough.
4) Pre-heat oven at 150'C.
5) divide the dough into 3 portions. Roll the dough become flat at 3mm thickness, use mini cookie cutter to cut out
6) place the cookies onto a non-stick baking sheet.
7) bake for 12-15mins. when half way baking, take out the tray and turn over the other side and continue baking till light golden brown





14/2/2015 Weekend Soup Stock




Weekend soup stock
Beetroot soup
1 beetroot, 2 onion, 4 sticks of celery, 5 baby corns, 2 kampung chicken tights, 1/2 carrot, 2 potatoes and 1 green apple.
Boil for 2.5hours.
Serve with alphabet pasta today with soup and some meat and vegetables.
Keep the remainder soup in freezer for next uses.
(I keep in reused breast milk storage bag)

Monday Blue for my 20mo lo as she woke up 6.00am this morning and I was trying to DL her to make her sleep again at 6.20am but I failed. Until 6.45am she still not yet sleep and I have no choice to bring her to the kitchen and continue my cooking.

Actually i slept nearly 12 midnight yesterday because of ironing cloths and washing bottles after my lo slept. So, hubby requested me not to wake up so early at 4am because of worrying I do not have sufficient sleep. So, I woke up at 5am this morning and prepared the following meals:-

Breakfast: 40-minute Soft Milk Bun and farm fresh cow milk

40 mins method soft milk bun
1 teaspoon instant yeast
1 tablespoon brown sugar
1 tablespoon caster sugar
1/3 cup warm milk
2 tablespoon olive oil
1 cup bread flour (can add more flour if too wet and can't form a dough)
1/2 teaspoon salt
1 tablespoon beaten egg
remaining egg add in some milk for egg wash
Steps
1. Add instant yeast, brown sugar, caster sugar, olive oil, milk into a mixing bowl, stirred it and rest aside for 15 mins till you will see floating foam as showed in the picture.
2. Mix in flour, salt and 1 tablespoon of beaten egg then use a spatula to fold and mix well the mixture into a dough form.
3. Then use electric kneading hook to knead for about 5-10 mins or till well combined.
4. Then take out the dough and hand knead for another 1-2 mins.
5. Roll, cut and shape into 6 small dough.
6. Grease little oil on the baking pan and line the dough in, cover with wet cloth and let it proof for about 10 mins. ( I let it proof for 20-25mins)
7. Brush egg wash onto the bread.
8. Bake at pre heat oven at 180 degrees C for 10mins (baking time vary for different oven)


Lunch and Dinner : Peanut Lotus Root chicken soup served with mix grains rice

Peanut Lotus Root chicken soup
Ingredients
2 chicken tight (removed skin)
1 pc Lotus Root (sliced thiny)
10 pcs red dated
2-3 tbsp organic ground nut
2 litre water

Steps:
1) Boil in high heat for 10 mins
2) turn to low heat for 1.5 hours


Teatime :  Sweet Potato sesame Rice sticks & pomegranate

Sweet Potato sesame Rice sticks
Ingredients
1/3 bowl of cooked rice
1/3 bowl of mashed sweet potato
5g unsalted butter
1 tsp sesame seeds
1/2 tsp black sesame seeds

steps:
1) mix all ingredients till combined
2) divide into 2 portions
3) put into a plastic bag and roll them flat
4) place in the freezer for 30mins
5) cut into 5-6mm width stripes
6) bake at preheated oven of 180'C for 15mins
