乳酪脆饼 Cheesy Melts 30/5/2015


Previously baked few times of yogurt melts, so today I was trying to bake Cheesy Melts. Yeah!! Successfully baked it.

之前烘培幾次酸奶脆餅(優格酸奶溶豆~曉廷愛烘焙的廚房), 今天自己挑戰試用乳酪奶油和車打乳酪做了這款乳酪脆餅。很開心, 竟然可以創出這款美味的寶寶餅~! 寶寶一直嚷著還要吃呢。

Ingredients / 材料 :
30g cream cheese 30克 乳酪奶油
10g grated cheddar cheese 10克 車打乳酪
10g castor sugar 10克 細砂糖
25g baby milk powder / new Zealand full cream milk powder 25 克嬰兒奶粉/全脂奶粉
20g corn flour 20 克 玉米粉
1 tbsp milk 1 湯匙 牛奶
2 egg whites 2 個 蛋白
Few drops lemon juice 幾滴 檸檬汁

Steps:
1) melt cream cheese and cheddar cheese under hot water.
把乳酪奶油和車打乳酪放進一個小碗, 再放進一個裝有熱水的大碗,以便溶化。

2) sieve in corn flour and milk powder into the melted cheese mixture, add in 1 tbsp milk and mix well..
把玉米粉和奶粉篩入溶化的乳酪裡,加入一湯匙牛奶, 攪拌均勻。

3) put egg whites into a clean bowl (no oil and no water) then add in few drops lemon juice, use electric hand mixer to whisk till bubbles is formed, add in1/2 of the sugar, continue beating another 1 min then add in the remaining sugar. Beat till hard peak form (whenyou over turn the bowl, the egg whites won't fall).
把蛋白放進乾淨的碗裡(無油無水), 加入幾滴檸檬汁, 用電動攪拌器把蛋白打發。半途分2次加入砂糖, 最後打至硬性發泡(當把碗翻轉,蛋白也不會掉下來。)

4) take 1/3 of the egg white mix into the cheese mixture, beat well or stir well. Then add in to the 2/3 of the egg white, fold in gently to avoid eliminating the bubbles.
將1/3的蛋白加入乳酪團裡, 攪拌均勻後倒進2/3的蛋白。用切入的方式, 輕柔地攪拌均勻。不要過份攪拌。

5) preheat oven at 120'C. Put the batter into a plastic bag then cut a small hole (5mm) at the edge. Squeeze it out on a non stick baking sheet.
先預熱烤箱120度, 再把乳酪蛋糊放進膠袋, 剪個小洞(5厘米)然後擠出一小堆的形狀在防粘的烘培紙。

6) bake at 100'c for 50-60 mins more till completely dry.
送進烤箱, 轉成100度, 烤50-60 分鐘或完全乾燥。

7) cool down before storing in air tight container. Can keep for 1 month.
放涼後收藏在不透風的罐子裡。可以收藏一個月。

29/5/2015 Happy Friday

Good Morning and Happy Friday ~ 
Yesterday bought a waffle maker from lazada and this morning was my 1st time making waffle. Still need improvement for better waffle next time...

I searched through internet and finally to try out the recipe shared by Easy Breakfast Recipes Easy Belgium Waffles. I did modify a bit the recipe by adding 1 tbsp rice flour to have a crunch texture and omitted the baking soda as I do not like to use it.


Breakfast : Belgium Waffles, golden pear & fresh milk

Lunch & Dinner : Plain rice with mix vegetables chicken curry

Teatime : Golden pear barley drink & steam pumpkin mantou



Easy Belgium Waffles
(Note this recipe will make about 2 -- 3 Belgian style waffles. For 4 -- 6 waffles you'll need to double the recipe.)

Ingredients:

1 cup Flour

1 tbsp rice flour
4 tsp Sugar
1/2 tsp Salt (I put 1/8 tsp only)
2 tspn Baking Powder
1/8 tspn Baking Soda (I omitted)
1 Egg Seperated
1 tblspn Canola Oil
2 tblspn Non-Salt Butter (Melted)
1 cup Water (I used fresh milk)

Directions:

1. Heat up your waffle iron while you gather your ingredients. I use a medium setting which gives me a nice lightly browned waffle.

2. In a medium bowl add your flour, sugar, salt, baking powder and baking soda. Stir together.

3. Add separated egg yolk and water to flour (dry ingredients). Mix it all together.

4. Add melted butter and canola oil. Mix together.

5. In a small bowl beat your egg white until fluffy or lighter. Add to your batter and mix together.

6. Add batter to your waffle iron and cook! Once the timer or cooked light comes on your done!


Mix Vegetables Chicken Curry
1 small potato
1/3 pc of carrot
3 tbsp frozen garden pea
2 shallot (chop finely)
1 chunk chicken breast pork (marinated with grape juice for 30mins)
2-3 tbsp pure grape juice
2 rice size of sea salt
2 tsp organic curry powder
1/2 cup full cream milk
Adequate water ( i used 2 cups water)

Steps:
1) cut all ingredients into small bite size that lo can chew
2) sautee shallot with grapeseed oil (or any good vege oil) till fragrant
3) 
add in chicken, carrot, garden pea and potato to stir fry 1-2 mins
4) add in curry powder to stir fry till fragrant too
5) then pour in water to cover all ingredients and shimmer till potato is tender
6) add in milk, grape juice and salt.
7) cook till desired consistency then off fire. ready to serve with rice.




Golden Pear Barley Drinks
Ingredients
1 cup POP Job's Tear (熟薏仁)
2 tbsp Job's Tear (生薏仁)
1 golden pear (diced)
1 honey date
3 cups hot water

Cook in slow cooker with auto mode for 2 hours. ready to serve warm

28/5/2015 Thursday meals

I did not hear the alarm sound and ended I woke up at 5.45am then start cooking meals at 6am... very rushing and finally just prepared simple foods for my 22mo lo.

Breakfast : Baby spinach rice pancake & Fresh milk
Lunch and dinner : Bear shape pasta with tomato sauce
Teatime : Mango yogurt and cheerios


Baby spinach rice pancake
Ingredients:
1 egg
1/2 bowl cooked white rice
1/2 bowl baby spinach (cut finely)
1 rice size of sea salt

Steps:
1) mix all ingredients in a bowl
2) use small spoon to scoop the rice mixture onto greased heated non stick pan, use spoon to gently form the round shape
3) pan fry by very low heat till both sides turn light golden brown


Lunch and Dinner : Bear shape Pasta with tomato sauce
Pasta
Ingredients :
Bear Shape pasta (or any type of pasta)
Cook as per packaging instruction, soak in cold icy water for 30 seconds, drain, set aside. 

Tomato sauce
Ingredients:   
(A)      
8 pcs cherry tomatoes
6 pcs black seedless grapes
1/2" beetroot (cut into small pieces)

(B)
1 orange mini bell pepper (cut into small pieces)
1 tbsp grated cheese
some oregano, garlic powder and parsley


Steps:
1) Blend grapes, tomatoes and beetroot together till smooth
2) Heat pan with olive oil
3) pour in the blended puree and 1/2 cup water, boil for 1-2 mins.
4) add 1 tbsp grated bega cheese and the bell pepper, cook till cheese melted.
5) add in some oregano and parsley.
6) off fire and done.



Mango Yogurt
Ingredients:
1/2 india mango
5 tbsp plain natural yogurt

Blend till smooth and ready to serve cold

Opps ...!! mummy woke up late again due to my 22mo lo was sleeping on my arm and I worried if I moved my arm will wake her up. Finally I got up at 5.22am instead of 4.30am.

Actually I was planning to make some food art for my gal but i found out i don't have seaweed to make the eyes, nose, mouth, etc... therefore, just wrap the rice with the egg sheet...;P


Breakfast : knead-less yogurt soft bun and fresh milk

Lunch and dinner : Omu-Rice with meat patties and beetroot apple soup


Teatime : Steam sweet potato and carrot & strawberry yogurt





Knead-less yogurt bun 
(Yield 16 buns)

Ingredients
150g Plain Natural Yogurt
300g high protein flour
50g muscovado sugar or any sugar
1/8 tsp sea salt
20g milk powder
1 egg
1 tsp dry instant yeast
20g grated cheddar cheese
35g unsalted butter (room temperature) / olive oil


Steps:
1) mix all ingredients in a big bowl.

2) cover bowl with cling wrap, leave a small hole for air flow.

3) keep in the fridge 2 hours onwards, after 2 hours, you may take out and shape any time.

4) take out the wet dough and place on greased mat, I use some oil to grease my hands too.

5) divide dough into 16 equally small dough if intent to have round bun 

OR
Divide dough into 2 portions,  shape the dough into a big ball, then roll flat. Use knife to cross cut the flat dough into 8 triangles. cut a bit at the short end and roll both sides up to the sharp angle and a croissant shape is formed.

6) place the formed buns on the baking tray, put inside the oven (power off) and proof for 30mins. You may place a bowl of hot water inside the oven to help the proofing process better.

7) after 25mins, Remove the baking tray from the oven. Pre-heat the oven at 170'C for 5 mins.

8) Bake the buns for 16 mins or till light golden brown

9) brush some unsalted butter on the bread surface for better appearance. 



OmuRice (Omelette Rice)

Ingredients:
(A) Rice
4 tbsp mix grains, cook rice as usual, set aside
1 tsp crushed garlic
1 tbsp sesame oil
1 tsp liquid amino

(B) Egg wrap
2 eggs + 1 tsp corn flour + 1 tsp water

(C) Meat patty
1/2 dried mushroom (diced finely)
3-4 tbsp minced pork or chicken
1 tsp corn flour or potato starch
dash of pepper powder
pinch of salt

Steps:
1) heat pan with medium heat, pour in sesame oil
2) sauteed the garlic, add in the cooked rice
3) add in the liquid amino and quick stir fry for 30 seconds
4) off fire and done

5) mix the corn flour with water in a bowl, stir well
6) crack in the eggs and mix well
7) pour 1/3 of the egg into frying pan to pan fry a thin layer of egg sheet, repeat till finish all the egg
(total you will have 3 egg sheets, extra one is just for in case only)

8) mix the minced meat with mushroom, pepper, salt, corn flour
9) divide the mixture into 4, roll by hands and form balls then lightly press it flat
10) pan fry till both sides light golden brown


Beetroot Apple Soup
Ingredients
2 chicken tights
1 medium beetroot
1 organic apple
1 large onion
1/2 carrot
1.5 litre water

steps:
1)  Blanch the chicken tights in boiling water for 2-3 mins. Dish and set aside.

2. Bring water to a boiling point. Add in all the ingredients and re-boil the soup . Then simmer for at least 1-2 hours.

p/s: no seasoning is required as the soup is naturally sweet and yummy

throw back 27/01/2015 Tuesday


Happy Tuesday~ ^.^
I noticed something that strange which is ~ i never yawn during the time i am cooking for my lo in the early early morning.... I observed some times already (since 1 year ago) and i only start yawning when i am driving... Wondering if it is because i am too busy during cooking and no time to yawn???? @@
Breakfast: vegetables cheesy "pie" & baby corn
Lunch & Dinner: tomato noodle in miso vege egg drops soup
Teatime: Red bean Angel Cake & papaya




Vegetables Cheesy Pie 
Ingredients:
1 slice of bread (i use homemade bread)
1 tbsp diced carrot
1 tbsp chopped onion
1 tbsp chopped cauliflower
1 tbsp grated cheddar cheese
1/2 egg + 1 tsp milk

Steps:
1) roll the bread into thinner slice then put into a baking bowl, cut off excess bread to form nicely bread bowl.
2) brush some egg on the bread bowl surface and bake at preheat oven at 150'C for 3 mins
3) heat frying pan and add some oil, stir fry the onion till fragrance, add in carrot and cauliflower stir fry for 3 mins.
4) take out the baked bread bowl, put the following ingredients in sequence:---> cheese -> stir fried vegetables -> egg -> cheese
5) bake at 150'C for 15 mins, then 160'C for 5 mins




Miso Vegetables Soup

Ingredients:
white radish
broccoli
baby corn
seaweed
1/2 egg
2 tsp miso paste



Red Bean Angel Cake

ingredients (A):
1) 100ml fresh milk/fullcream milk
2) 40ml grapeseed oil (or any vege oil)
3) 1 rice size of salt
4) 70g cake flour
5) 1 tbsp cooked red bean (can omit)

ingredients (B):
200g egg white
75g castor sugar (i use 45g only)
1 tbsp lemon juice

Steps:
1) put ingredients A1, 2, 3 into a sauce pan and heat it till warm (i do not how hot), then add in the red bean and cake flour, mix well till no slump.
2) preheat oven at 170'C
3) beat egg white with lemon juice till bubbly and add in sugar by 3 separate times, beat till soft peak.
4) add 1/3 of the egg white into the ingredient A batter, use spatula to fold in well combined, then add in the balance of egg white and fold in well combined too.
5) pour the cake batter into a 8" / 20cm chiffon cake mold, tab on table twice to release excess air in the batter.
6) bake at 160'C for 30-40 mins
7) insert a skewer into cake and come out clean, its done.
8) take out the cake and turn up side down immediately, cut into pieces after cooling down

Overslept till 4:30am as tired waking up around 3am to DL and change diaper for my 17mo lo..

Breakfast: grape custard filling pancake with fruits
Lunch & Dinner: macaroni in tomato sauce & watermelon juice
Dinner will have soup instead of juice
Teatime: meat floss sticks & watermelon juice
CNY is approaching and this meat floss stick is one of the CNY cookies in my baking list. Today i bake for little one's version... Hmmm.. Crunchy and yummy!!

Overnight proofing pancake 

(need to be prepared 1 day before cooking)

ingredients:
100g cake flour
110g full cream milk
1g instant dry yeast
1 egg
10g muscovado sugar

steps:
1) blend egg, milk and sugar till combined
2) pour the mixture into flour and stir well
3) sieve thru a strainer to have smoother texture
4) add in yeast and mix well
5) let it proof for 1 hour in room temperature 
6) stir the mixture to release air then keep in fridge overnight
7) take out from fridge 30mins before pan fry
8) scoop a spoon of the mixture without stirring the mixture and pan fry till bothsides golden brown

serve with fruits or topping with yogurt and fruits or put some custard filling like dorayaki...


隔夜發酵煎餅
(需要烹調前1天製備)
材料:
100克 低筋麵粉/蛋糕粉
110克 全脂奶
1克 即速乾酵母
雞蛋 1個
20克 有機蔗糖/砂糖

步驟:
1)把雞蛋,牛奶和糖放進一個大碗裡,攪拌均勻。
2)然後將混合好的倒入麵粉,攪拌均勻。
3)把麵糊用過濾網具過篩。
4)把酵母加入篩過的麵糊中,拌勻。
5)讓它在室溫發酵1個小時。
6)一個小時過後,用湯匙攪拌發酵後的麵糊,然後蓋好,收進冰箱過夜。
7)要煎的30分鐘前,把麵糊取出回溫
8)用勺子直接舀一大匙麵糊(不要攪拌),倒入已經預熱威化機或平底鍋,煎至雙面金黃色即可

grape custard filling
ingredients:
2 tbsp grape juice
3 tbsp full cream milk / fresh milk
1 tbsp corn flour

steps:
1) mix all the ingredients and stir till no lumps
2) boil it under small fire and keep stirring
3) off fire once it turns sticky



macaroni with tomato sauce 

Tomato sauce
Ingredients: 
1 brown button mushroom (cut it into slices)
7 pcs organic cherry tomatoes
1 small onion (chopped finely)
7 pcs black seedless grapes (Blend and sieve)
1 inch carrot (shredded)

Steps:
1) Blend the grapes and sieve away skin. Add in tomatoes and blend together.
2) Heat pan with olive oil, saute onion till golden brown then add in mushroom and carrot and stir fry for a while.
3) pour in item (1) and some water, boil then simmer for 2 mins.
4) add 1 tbsp grated bega cheese and cook till cheese melted..
5) add in some pepper and dried parsley.
6) off fire and done.



homemade meat floss

Meat Floss Sticks
Ingredients
150g superfine flour
75g unsalted butter
10g sugar
3g salt ( i did not put salt, i put 5g bega cheddar cheese)
30g meat floss
50g egg
3g seaweed flakes

i do not follow the original recipe for the steps because too early morning i do not want to on the mixer to beat the butter and sugar. the following is my own steps...
Steps:
1) sieve flour into butter, then wear a hand glove, rub together the flour and butter until it resembles a breadcrumb texture.
2. Add the grated cheese, sugar, seaweed flakes and meat floss and mix well.
3. add in egg little by little at the same time kneading by hand to form a nice dough ball. (it is not necessary to use all the egg, can stop pouring if dough can be formed) It shouldn’t be sticky. If sticky add a little more flour.
4. divide dough into equally quantity and roll them into balls then roll into stick forms.
5. You can even roll the dough become flat then cut by knife into stripes form.
6. Place onto a lined baking tray and bake in a 170 degree Celsius for 20-25 minutes or until lightly golden brown.
