30/10/2015 Friday 核桃煎餅


Happy Friday~~ ^.^
Once again it's Friday and tomorrow has no work....hohoho...
Oh yeah.... Happy Halloween too!!!
This morning I overslept and woke up nearly 6am so I have no time but just cooked simple foods for my gal today.

Last night we did our regular measurement heigh. weight and head size for our 27mo little princess. The result:
13.4kg nett W, 92cm H, 47cm Head circumference

自寶寶満月以來, 每個月底一定會幫寶寶量體高和體重哦~
92公分高, 13.4公斤净重
比上個月重了100克和高了1公分。呵呵呵呵。。。

Breakfast : Walnut Sweet potato Pancake, cherry tomatoes and fresh milk
Lunch and dinner : Beef mushroom porridge
Teatime : Honeydew and young coconut juice



今天的煎餠,續之前(5/11/2014)自己的食譜再更改,依然鬆軟好吃。

補腦核桃煎餅
材料: (18片5-6cm直徑的煎餅)
1個雞蛋
35克 煮/蒸熟的番薯
10克 核桃
2茶匙 米糠油
2茶匙 有機蔗糖(任何醣類)
2湯匙 鮮奶(任何奶類)
3湯匙 中筋麵粉
1/2茶匙 無鋁泡打粉

做法:
1) 用料理棒攪拌所有材料,除了麵粉和泡打粉。 (打10秒)
2) 加入麵粉和泡打粉,用湯匙攪拌均勻。
3) 加少許油在熱的平底鍋裡,再用廚房紙巾擦勻。(我完全沒有放油,因為新買的鍋很棒)
4) 將平底鍋放在濕布上降溫,再放回爐上。(全程用小小火)
5) 用1湯匙的量匙,分別挖一勺麵糊放入鍋中,蓋上蓋子。約30秒鐘左右可見到蛋餅表面出現若干小洞、打開蓋子並可以翻面了。 (我家的鍋一次可以煎7片)
6) 翻面之後也同樣煎半分鐘左右即可出鍋。
7) 重複步驟4-6 ,直到麵糊全部用完。(我一共重複3次)

~**本人的小貼士**~

1)以上食譜大約可以做18個小小的鬆餅,每次勺同樣的分量,鬆餅的大小就會比較均勻啦~
2)油不要放多,可以滴幾滴油在鍋內之後,用紙巾擦勻。
3)一定要用最小火。火一大就容易煎焦。
4)我家平底鍋是28公分的,可以一次煎7-8塊。
5)要煎美美的煎餅,讓平底鍋降溫的步驟就一定不可以省略哦。

Walnut sweet potato pancake 
Ingredients: (yield 18pcs 5~6cm dia. pancakes) (1st attemp: 5/11/2014)
1 egg
35g cooked/steamed sweet potato 
10g raw walnut
2 tsp rice bran oil
2 tsp organic cane sugar (any sugar)
2 tbsp fresh milk (any milk)
3 tbsp all purpose flour
1/2 tsp aluminum free baking powder 

Steps:
1) blend all ingredients except the flour and baking powder with hand blender for 10 seconds.
2) add in flour and baking powder, stir well.
3) heat pan with little olive oil and wipe off. ( I did not put oil as my pan is great in non stick)
4) place the pan onto a damp cloth or water to cool down
5) put 1 small scoop of batter on the pan and put another till your pan has no more space.
6) close the lid for 30secs (very very small fire)
7) open lid and you shall see little holes on the pancakes are formed.
8) flip carefully and cook the other side till brown about 30 secs too.
9) repeat steps 4-8 until all batter is finished

TIPS to cook nice pancake:
1) The above recipe yield 18 small pancakes, using same volume of batter, pancake size will be more evenly ~
2 ) Do not put too much oil , you can drop a few drops of oil on the pan then wipe evenly by a kitchen towel paper.
3 ) Always use the smallest fire to avoid burnt easily.
4 ) I am using 28cm pan which can cook 7 mini pancakes at the same time.

5 ) To make nice pancake, the cool down process must not skip!!




牛肉玉菇粥
材料:
5湯匙 混合穀物(藜麦,小米,糙米和白米)
60克 牛肉末 + 3湯匙鮮牛奶
1碗 玉菇
1-2湯匙 南瓜切條
1小块 生姜
1/2茶匙液態氨 / 1咪咪海鹽
胡椒粉适量

做法:
1 )把牛奶加入牛肉末大約20分鐘
2 )把雜糧加4-5碗水倒进小锅里煮15-20mins 。
3 )把玉菇和南瓜切成小塊。
4 )把牛肉末,玉菇,生薑和南瓜放入粥里繼續煮15分鐘。
5 )加入鹽和胡椒粉后熄火。
6 )趁热食用。


Beef Mushroom Porridge
Ingredients:
5 tbsp mix grains (quinoa, millet, brown rice and white rice)
60g minced beef + 3 tbsp fresh milk
1 bowl shimeji mushroom
1-2 tbsp pumpkin stripes
1 small cube of ginger
1/2 tsp liquid amino / pinch of sea salt
dash of pepper powder

Steps:
1) marinate minced beef in fresh milk for 20mins.
2) cook mix grains in 4-5 bowls of water with low fire in a small pot, cook for 15-20mins.
3) cut the mushroom and pumpkin into small pieces.
4) pour the minced beef, mushroom, ginger and pumpkin into the porridge and continue cooking for 15 mins.
5) add in pinch of salt and pepper and off fire. ready to serve warm

Finally we have blue skies white clouds here in Malaysia. ... what a wonderful day ~


Breakfast : Cheese Bread Roll (homemade white toast), quail eggs, cucumber and fresh milk
Lunch and dinner : Prawn vegetables Stew Rice and Chinese Yam soup
Teatime : Healthy Red Bean Cake

What is Chinese Yam?
In Chinese it is known as huáishān (淮山), shānyào (山药, 山藥) (lit. "mountain medicine."), or huáishānyào (淮山药, 淮山藥). Rarely, also referred to as shǔyù (薯蕷).
In Japanese, it is known as nagaimo (lit. 'long yam'; kanji: 長芋). Furthermore, nagaimo is classified into ichōimo (lit. 'ginkgo-leaf yam'; kanji: 銀杏芋), or yamatoimo (lit. Yamato yam; kanji: 大和芋), depending on root shapes.

Chinese yam is used in Chinese herbal medicine. It is traditionally used to treat disorders related to the stomach, spleen, lungs, and kidneys.
As an herbal treatment, Chinese yam is used to target the stomach and spleen. It also thought to act on the lung and kidney. It is used to treat:

poor appetite
chronic diarrhea
asthma
dry coughs
frequent urination
diabetes

Chinese yam contains allantoin. This is a natural compound that can accelerate the growth of healthy tissue and reduce healing time. Topically, Chinese yam is applied to treat ulcers, boils, and abscesses on the skin. Victims of scorpion stings and snakebites can be treated with its leaf juices. 


Cheese Bread Roll
Ingredients:
2 slices homemade white toast
1/2 cheese stick

Steps:
1) cut away the 4 sides of the white toast
2) use a roller pin to roll the toast FLAT
3) place 1/4 of cheese stick at one end of the toast and spread some cream cheese sauce at another end of the toast
4) roll the toast from the cheese side until the other end
5) cut the bread stick into 4 equally portions
6) ready to serve

The making of Cheese Bread Roll

鮮蝦藜麥小米糙米燉飯
材料:
洋蔥末1大匙
鮮蝦6只
藜麥小米糙米飯 2小碗 (蒸熟的)
橄欖油1大匙
蘆筍5條 (切丁)
日本黃瓜 1/3條 (切丁)
青燈籠椒丁 ( 1大匙)
烤熟的腰果 適量
胡椒粉 適量
高湯 1/4 杯
氨基醬油 1/2 茶匙 (或海鹽一咪咪)

做法:
1.平底鍋中火加熱,然後加入橄欖油炒香洋蔥末。
2.加入鮮蝦,蘆筍,黃瓜和燈籠椒,略煮一下,再將蝦煮熟後撈出備用。
3.加入高湯,米飯,以小火炒至高湯略幹。
4.將已煮熟的鮮蝦加入並加胡椒粉和氨基醬油/鹽調味即可。
5.最後拌入腰果就可以食用了。


Prawn Stew Rice
Ingredients:
1 tbsp chopped shallot
6 pcs Prawns
2 small bowls mix grain Rice (Quinoa, millet, brown rice)
1 tbsp olive oil
5 pcs Asparagus ( diced )
1/3 Japanese cucumber ( diced )
1 tbsp chopped bell pepper
some cashew nuts 
Pepper to taste
1/4 cup broth
1/2 tsp Liquid Amino (or pinch of sea salt)

Steps:
1. Heat pan over medium heat , then add in olive oil and saute the shallot till fragrant.
2. Add in shrimp , asparagus , cucumber and bell pepper, cook for a while. Remove the shrimps and aside.
3. Add in broth and rice, cook till the broth slightly dry.
4. Add in cooked shrimps, dash of pepper and liquid amino/salt to taste.
5. Lastly, mix in the cashew nuts and ready to serve.

山藥為常用中藥,性平,味甘。具有補脾養胃、生津益肺、補腎澀精之功能。用於脾虛食少、久瀉不止、肺虛喘咳、腎虛遺精、帶下、尿頻、虛熱消渴。炒山藥補脾健胃,用於脾虛食少、泄瀉便溏、白帶過多。

山藥紅豆糕
材料:
60克 新鮮山藥
70克 熟的紅豆(如何快速煮紅豆
1 茶匙 有機蔗糖
2湯匙水
2茶匙玉米粉

做法:
1)山藥去皮,切片。蒸5-10分鐘。壓泥備用。
2)把熟的紅豆放入小鍋,加入水,糖和玉米粉,攪拌均勻。小火加熱,煮至濃稠。熄火,稍微待涼(溫)。
3)準備一個碗,舖一層保鮮膜至碗底和邊,服帖就可以了。
4)把山藥泥倒入碗裡,用勺子抹平。然後把煮好的紅豆鋪在抹平的山藥上面。用勺子壓緊抹平即可。
5)放入冰箱涼一涼/待降溫後就可以食用了~



Healthy Red bean cake
Ingredients:
60 grams of raw chinese yam
70 grams of pre-cooked red bean (how to cook red beans in faster way)
1 tsp organic cane sugar
2 tbsp water
2 tsp corn starch

Steps:
1) Peel and slice the Chinese yam. Steam for 5-10 minutes. mash and set aside.
2) Put the cooked red bean in a pan, add water, sugar and corn flour, mix well. With low heat, cook until the mixture thickened. Off fire and let it cool slightly (warm).
3) place a layer of food wrap on a bowl, then press the wrap firmly till the bottom and side of the bowl.
4) pour the (1) into the bowl and level with a spoon. Then add in the cooked red bean on top of the yam, use spoon to press slightly and evenly.
5) store in the refrigerator to cool down before serving ~

After few days lazying to wake up in the morning, I was able to wake up at 4.30am this morning as I need to bake a toast to make sandwich lunch box for my hubby and myself too. 

Breakfast: Sweet Potato Doughnut and fresh milk

Lunch: Pumpkin noodle with Tomato pumpkin soup

Teatime: Mango Yogurt and White Toast


橙薯甜甜圈
(by yen li 第二次嘗試​​與改良)
材料:(8個小甜甜圈)
80克 煮熟的橙薯(任何番薯都可以)
30克 低筋麵粉/蛋糕粉
10克 太白粉/馬鈴薯澱粉
一咪咪 天然小蘇打(可省略)
1湯匙全脂奶粉 (14.3gm)(可以使用任何豆粉)
1/2湯匙米糠油 (7.5ml)(或融化的無鹽奶油‘1歲以上’或任何菜油)


做法:
1 )把一條連皮的橙色番薯放進沸水中煮15分鐘(或至軟)
2 )去皮並壓成泥然後稱好分量。
3 )加入油,麵粉,太白粉,小蘇打(可省略)和奶粉,攪拌均勻,形成麵團。
4)把麵團分成8份同等量,搓揉成一條直棒,然後連接兩端在一起,形成一個圈圈。
5 )把平底不粘鍋加熱(非常非常小火)(無需放油) ,將甜甜圈放在鍋上,蓋上蓋子。燜煮3分鐘,然後翻另一邊,再蓋上蓋子3分鐘或至兩面金黃色即可。

Sweet Potato Doughnuts 
(recipe by Yen Li and this is 2nd attemp)
Ingredients:
80g cooked mashed sweet potato
30g all purpose flour / cake flour
10g potato starch
pinch of natural baking soda (can be omitted)
1 tbsp milk powder (or can use any soy milk powder)
1/2 tbsp rice bran oil (or melted butter or any vege oil)


Steps:
1) boil sweet potato (with skin on) in boiling water for 15mins
2) peel and mash the cooked sweet potato
3) add in oil, flour, potato starch, baking soda and milk powder, mix well and form a soft dough
4) divide dough into 8 equally portions, roll into sticks, then connect both ends together and form a ring
5) heat non-stick pan with very small fire (no oil needed), place the doughnuts on the pan and cover with lid. Pan cook 3 mins each sides or till golden brown.





This soup is super yummy even no seasoning is added. The natural taste from the vegetables is awesome!!!

Tomato Pumpkin Soup
Ingredients:
10 pcs cherry tomatoes
1 pc tomato
1 onion
1 pc pumpkin (about the size of 1 onion)
65g meat tenderloin
3 cups water
dash of pepper

Steps:
1) Blend the cherry tomatoes and tomato with or without water, sieve, and set aside.
2) chop the onion, slice the meat and cut the pumpkin into stripes.
3) Boil water in a small pot, add in meat, onion and pumpkin once it is boiled.
4) Add in the sieved tomato puree and cook for 10-15 mins.
5) Lastly, add in dash of pepper and soup is ready to serve warm.




Mango yoghurt
Ingredients:
3 tbsp natural greek style yogurt
100g ripe mango flesh

Blend with hand blender till smooth.

Happy Tuesday and good afternoon dear all...
I almost forgot to post the meals of the day for my 27mo lo as I was busying to make a soft book "quiet book" for my gal. Kekeke....half way done. ...

Breakfast : baked wantan with cream cheese sauce,  Strawberry,  vegetable medallion and fresh milk 

Lunch and dinner : Steam vegetables cheesy rice

Teatime : Strawberry milk shake and cheese cake

I am inspired by mommy Celine Tan in HFFMB FB group, bake the wantan instead of frying it... It is very yummy and my gal finished all (informed by hubby just now).

Baked Wantan with cream cheese filling and banana
Ingredients:
6 pcs wantan skin (store bought)
1 pc banana
some cream cheese sauce (recipe)

Steps:
1) spread some cream cheese sauce at the half triangle part of the wantan skin
2) place a slice of banana on the sauce
3) fold and close then form triangle wantan
4) bake at preheated oven of 150-160'c for 10mins or till golden brown


Steam vegetables cheesy rice
Ingredients:
(2 servings)
6 tbsp white rice (presoak 1 hour)
4 pcs organic dried shitake mushroom
some edamame
2 tsp natural pine nuts
20-30g cheddar cheese (shredded)
1/2 bowl baby spinach
dash of pepper powder

Steps:
1) Place the above ingredients follow by sequence into 2 small casseroles:
~ rice, shredded cheese, mushroom, edamame, pine nuts, baby spinach and shredded cheese.
2) pour in 3 tbsp soup stock/water and dash of pepper powder in each casseroles.
3) Steam in boiling water for 15-20mins.


Strawberry Yogurt Milk Shake
Ingredients:
5 pcs strawberry
2 tbsp natural greek yogurt
1/2 cup fresh milk

Blend till smooth. Sieve thru strainer for smoother texture if desired.

24/10/2015 Saturday 菠菜威化餅



菠菜威化
材料:
雞蛋 3粒
低筋麵粉 160克
菠菜粉1茶匙(原味不必加)
牛奶 100克
玉米粉 40克
泡打粉 5克
白糖 60克
無鹽奶油 50克

做法:
1.備齊所需材料。我用大的蛋(3顆)。
2.雞蛋+白糖混合,用打蛋器打至溶解。
3.加入牛奶攪拌均勻。
4.低粉,玉米粉,泡打粉和菠菜粉混合過篩,加入到蛋液中,攪拌至無顆粒。
5.無鹽奶油切小塊放入小碗,放入一個裝有熱水的大碗至無鹽奶油融化。 (隔水融化)
6.在麵糊中加入融化的無鹽奶油。
7.用打蛋器順著一個方向攪拌均勻,舀起麵糊滴落後緩慢消失狀。
8.WAFFLE餅機上刷上融化的無鹽奶油。每個角落都要刷,上下面都要刷。
9.舀適量的麵糊。從機器中間倒入。
10.蓋上模具,小火加熱,待約2-3分鐘,即可反面繼續小火1分鐘即可。

SPINACH WAFFLE
Ingredients:
3 Eggs
160g cake flour
100g fresh milk
40g corn flour
Spinach powder 1 tsp ( omit if original flavor )
5g baking powder
60g organic cane sugar
50g melted unsalted butter

practice:
1) Prepare and weight all ingredients.
2) mix egg and sugar, beat with a whisk until dissolved.
3) Add the milk and mix well.
4) Sieve flour, corn flour, spinach powder and baking powder in a mixing bowl , add the egg mixture and stir until no lumps.
5) Add melted unsalted butter in the batter .
6) Using a whisk, stir in one direction and till smooth.
7) Preheat waffle machine and brush with some oil/butter, pour the right amount of batter into the waffle mold.
8) Bake for 3-4 minutes or till light golden brown (can open lid to check) and continued to reverse another side for another 2-3 mins.

Happy Monday Dear All...
Today is my mil's birthday and i set my alarm last night to wake up 4.10am so that i can prepare breakfast for the whole family and also meals for my 27mo lo. But unfortunately, I didn't hear the alarm sound twice and self waking up at 6.11am. I jumped up from the bed and quickly went down to the kitchen and only able to cook the following foods...AIKSSSS >.< ||||

Breakfast: hard boiled egg and fresh milk

Lunch and Dinner: Stir fried noodle

Teatime: 5 mins bun sticks (crunchy type) and banana yogurt



Stir Fried Noodle
Ingredients :
1 pc of noodle
50g meat tenderloin
1/2 bowl of baby lady finger
1" zuchinni (cubed)
1" carrot (shredded)
1/2 tsp liquid Amino
Dash of pepper powder
2 cloves garlic (sliced)
1/3 cup of soup stock / water

Steps:
1) cook noodle as per packaging instruction. 
2) heat pan with some olive oil and sauté garlic till fragrant
3) add in the following and stir fry, meat, baby lady finger, zuchinni and carrot.
4) add some water to cover all ingredients and shimmer for 1 mins
5) add in the pre-cooked  noodle, add in liquid amino and pepper powder,  
6) off fire and ready to serve warm.




5 mins Swirl Bun Biscuit
Ingredients :
2 eggs
55g high protein flour 
90g fresh milk or full cream milk or water
25g unsalted butter 
2 tsp muscovado sugar or any sugar or omit

Steps :
1) sieve flour and set aside 
2) cook milk, sugar and butter in a wok with low heat until boiling
3) add in flour and stir quickly with a spatula until dough is form and non stick
4) off fire and remove dough from the wok, let it cool down
5) when hand can touch on dough,  add in egg 1 by egg, mix well 1 egg then only add in another 
6) once the dough turns into very wet dough, can stop adding egg (you may refer the photo below for the texture)
7) put the well mix batter into a plastic bag 
8) Pre heat oven at 190'C 
9) cut a 0.5 width hole at the edge of the plastic,  squeeze out the fish shape or any shapes or alphabets on the non stick baking sheet laid on the baking tray

10) bake for 15 mins or till light golden brown on sides, turn the baking tray inside out, lower temperature to 170'C bake for 2 mins, OFF oven, let the biscuits sit in the oven for 10 mins before removing them from oven.


Banana Yogurt
Ingredients:
2 medium ripe bananas
3 tbsp greek natural yogurt
2 tsp honey

Blend for 5 seconds with hand blender. ready to serve cold.

Happy Friday dear all~

Breakfast: Condensed Milk Cupcake, roasted almond, hard-boiled egg, apple slices and fresh milk

Lunch and Dinner: Stir fried Kelp Noodle and Radish Soup

Teatime: Dried Apple snack and Peach Grape Juice


Condensed Milk Cupcake
Ingredients:
30g fresh milk
20g Sweetened Condensed Milk
20g Rice Bran Oil
4 pcs eggs
20g castor sugar
60g superfine flour / cake flour

Steps:
1) add milk, condensed milk and oil in a small bowl, mix well.
2) beat eggs with sugar till ribbon stage by electric hand mixer (about 5 mins beating time)
3) sieve in flour into the beaten eggs by 3 portions and gently fold well
4) add in the (1) mixture and fold well
5) pour mixture into cupcake liners
6) bake at preheated oven of 160'C for 15mins or till light golden brown



Stir Fried Kelp Noodles with prawns and mushroom
Ingredients :
1 pc of organic kelp noodle
4 pcs medium prawns
4 pcs brown button mushroom
1/2 bowl of broccoli
1/2 tsp liquid Amino
Dash of pepper powder
2 cloves garlic (sliced)
1/3 cup of soup stock / water

Steps:
1) cook noodle as per packaging instruction. 
2) heat pan with some olive oil and sauté garlic till fragrant
3) add in the following and stir fry, prawn, broccoli, mushroom
4) add some water to cover all ingredients and shimmer for 1 mins
5) add in the pre-cooked  noodle, add in liquid amino and pepper powder,  
6) off fire and ready to serve warm.

Radish Soup

23/10/2015 6am : organic apples had been removed core and sliced, soak in salt water for a few minutes, draining excess water.

Spinach had been cooked in boiling water for 2mins, draining excess water too.
